Cupcakes, cupcakes, more cupcakes!

One of my mother's friends apparently likes my cupcakes! Oh yeah!
She asked if I could bake 20, so of course I said yes and baked 70.
I see your raised eyebrow, and raise you another.
Yes, I can get carried away sometimes, but my dad told me to make some for us as well, and 50 sounds about right for four people, right? Right?

I tried two new recipes, Ultimate Marble Cupcakes and Homemade Lemon Cupcakes, both by Sally's Baking Addiction.
The marble cupcakes are so pretty and delicious (even though the frosting is a bit too sweet for my taste), I almost don't want to eat them! Almost. I already had three.
The lemon ones aren't my favourite lemon cupcakes, but they're not bad and my parents both think they're delicious.
Other than that I also made my go-to chocolate cupcake with my go-to frosting, raspberry whipped cream.

Fake Blueberry Muffins

Why fake blueberry muffins, you ask?
Because they're cheap!
And delicious!
And so quick to make!
And you use up the yogurt in the fridge you really should eat before it expires!
Yay!

Fake Blueberry Muffins
(makes about 9 muffins)

180g (¾ cup) blueberry yogurt
1 egg
45ml (3 tbsp) sunflower/vegetable oil
½ tsp vanilla extract/sugar
195g (1⅔ cups) flour
75g ( cup) sugar
1 tsp baking powder
½ baking soda
¼ salt

Preheat your oven to 190°C (375°F).
Whisk together the yogurt, egg, oil and vanilla extract.
In another bowl, sift together the flour, sugar, baking powder, baking soda and salt.
Fold the dry ingredients into the wet ingredients.
Evenly fill muffin cups and bake for about 15 minutes or until a toothpick inserted comes out clean.
Let them cool (or don't) and quickly eat them, before anyone else notices you made some.



Yes, their colour is kind of weird (especially because they started with a purple yogurt, which made a grey batter, which then turned into blue/green cupcakes), but they're delicious, and super quick.
You can, of course, use other yogurts as well, just look at what you have in your fridge!

Belated Mother's Day

A BBQ party in the rain maybe isn't the best of ideas, so our mother's day celebration was moved back a week.
I'm always the person who provides the cake, or in this case, cupcakes, and had lots of fun coming up with this one.
Quite some time ago, I stumbled upon pictures of apple roses, and then some time after saw them done by a contestant on The Great British Bake Off. So I looked up the recipe, and actually found Mary-Anne's (TGBBO contestant) blog, with the recipe for apple rose tarts.
I made a few minor adjustments, since we Austrians don't have things like double cream, and voila, apple roses! (Just for your information, if you substitute double cream with crème fraîche, the custard will turn into come kind of cheesecake. Which is still delicious!)

Other than that, I made rose cupcakes with Oreo crumbs (to look like soil), a fondant flower and a lemon balm leaf and strawberries in brownie 'dirt'. (With a sign that says 'Untererdbeeren'. Strawberries in German are 'Erdbeeren' which means 'Earthberries' in English. Adding 'unter' makes them 'Underearthberries', which of course don't actually exist, but I thought it would be cute.)
